Christmas is the time of year when most traditional sweets are made: Puff pastries, pestinos, angel hair dumplings, cookies, etc ... Well today we continue to these ellipsis by adding these delicious fried cookies filled with pastry cream.

It is a very traditional recipe, I remember that when I was little we used to do it at my grandmother's house. This coming weekend my mother arrives from the town and we will make them for sure, like some more recipe for typical Christmas desserts, maybe I will surprise you these days with another even richer than these cookies.

Ingredients

  • Maria cookies.
  • I beaten egg.
  • Sugar.
  • Cinnamon.
  • Milk.

For custard cream:

  • 1/2 liter of milk.
  • 4 egg yolks
  • 100 g of sugar.
  • 50 g of cornstarch.
  • 1 Teaspoon vanilla extract.

Preparation

First, we will have to perform a custard cream. To do this, we will heat the milk with the vanilla essence and sugar. Separately, in a bowl, mix the eggs and cornstarch. When the milk starts to boil, we lower the heat and add the mixture of eggs and cornstarch. We stir well, and when it starts to boil again we will remove from the heat. We will pour this thick mixture on a high source to cool it.

Once the cream is cold or warm, we will have a stick of it on a Maria cookie, and then place another on top. So, successively, until we fill the cookies we want or use up all the cream. You can also use this cream for any cake or sponge filling.

When all the cookies are done, we will pass them quickly through milk, then we impregnate it well in beaten egg and then the we will fry in olive oil, to which we have preheated it with a slice of orange peel and lemon.

Finally, we will drain them on kitchen paper, and after a few seconds, we will pass it through a mixture of flour and ground cinnamon, to give it this sweet batter that both young and old like so much.
