Puff pastries

Puff pastry seems to be the protagonist this weekend. Of course, today unlike yesterday, we do not take shortcuts and make puff pastry at home. It is more laborious but it is worth it to try these delicacies made by yourself, I can assure you.

The puff pastry They are a common sweet on many tables at Christmas and although there are many brands that sell them, I encourage you to make them at home. You will obtain quality puff pastry and the satisfaction of being the only one responsible for this dessert that I assure you will soon disappear. You can present them together with some chocolate truffles with brandy this Christmas, do you like the idea?

Ingredients

  • 600 g. pastry flour
  • 400 g. cold butter
  • 60 g. of sugar
  • 50 g. white wine
  • 50 g. orange juice
  • Zest of 3 oranges
  • Powdered sugar

Crafting

We clean the oranges and we grated the skin. Then we squeeze what is necessary to obtain 50 g. of juice.

We weigh the flour and sift it. We put it in the bowl of the food processor together with the flour, the sugar, the butter cut into sheets, the juice, the zest and the white wine. We mix well until all the ingredients are united.

We make a ball with the dough, wrap it well in transparent film and the let it rest in the refrigerator two hours minimum.

After time has elapsed, we take the dough out of the fridge and place it on a floured surface. We let it temper and then, with the help of a roller, we stretch it to a thickness of approximately 1 cm. We then fold one end towards the center and then the other, leaving these overlapping. We pay attention that there is no excess flour on the inside face that we are going to fold; if so, we remove it with a brush before making the folds. We stretch it again with the roller into a rectangle and we make another fold. We repeat this process 3 more times.

Puff pastry

We stretch the dough for the last time with the roller to a thickness of 1,5 cm and the we cut into squares using a cutter or a good knife.

We place the puff pastry on a baking sheet lined with baking paper and the we bake at 190º, 30 minutes, until they start to brown.

When they are done, they are carefully removed and placed on a rack to cool. Finally I know sprinkle with icing sugar.
