There are many of us who take advantage of the weekend to cook rice. And I, at least, always take care of adding a few more handfuls to the casserole to have food ready for Monday. This is what I have done when preparing this rice with chicken and carrot that I share today.

It is one of the rice dishes that I like the most. A classic that I never get tired of and that is also easy to version by incorporating different vegetables into the base. In this case to fried onion and pepper I added a significant amount of carrot, because for me the combination of this vegetable with chicken I always find it works.

  • 1 chicken, chopped
  • 1 chopped onion
  • 1 green bell pepper, minced
  • ½ red bell pepper, chopped
  • 1 leek, minced
  • 2 large carrots, chopped
  • 2 glasses of rice
  • A few threads of saffron
  • A teaspoon of double concentrated tomato
  • A pinch of paprika.

  1. Heat oil in a large saucepan, enough to cover the base, and fry the chicken over high heat until golden. Then we take it out and reserve.
  2. In the same oil Now we fry the onion and the peppers for 5 minutes.
  3. Now, we incorporate the carrot and fry for 10 more minutes.
  4. We take advantage of that time to put 5-6 glasses of chicken broth in a saucepan and heat it together with the tomato concentrate, saffron, paprika, salt and pepper.
  5. After 10 minutes, we add the leek, season with salt and pepper and sauté the whole until it softens.
  6. Then, we add the rice to the casserole and mix well.
  7. Immediately after Add the chicken and pour the broth. boiling over the rice.
  8. We mix and cover the casserole to cook it at medium high heat 6 minutes.
  9. Next, we lower the heat, uncover and we cook 10 more minutes.
  10. We check if the rice is done and if so, we remove it from the heat and cover the pot with a cloth so that the rice rest for a few minutes.
  11. Then we enjoyed the rice with chicken and carrot.
