White beans with rib, inexpensive and nutritious recipe
I love spoon dishes, legumes: beans, lentils and chickpeas, especially. Now that the temperature begins to drop, these types of dishes are becoming more common on the table and I will not be the one to protest. With vegetables, rib, blood sausage or chorizo, beans are a delicacy.
This week we cook them at my house with vegetables and pork chop; without too much fat. Ingredients
For two people
- 3 tablespoons of oil
- 1 garlic clove
- ½ onion
- 1 leek
- Carrots 2
- 500 g. rib
- 300 g. white bean
- Water
- Sal Island
- Pepper
- 1 hoja de laurel
For the sofrito
- 2 garlic
- 1 chilli (optional)
Crafting
The night before we put the beans to soak in cold water.
Lightly fry the vegetables finely chopped in a pot, with a drizzle of olive oil.
Next, we add the chopped rib and seasoned, and sauté a few minutes.
We incorporate beans, we cover with water and season to taste. We also put a bay leaf in the fast pot.
We put the lid on and cook everything soft fire for 25-35 minutes, depending on the pot.
We prepare the sauce. To do this we crush 2 garlic and add them to a frying pan with very hot oil. We also add a little guidilla, if we like spicy. Before the garlic gets too roasted, we pour the sofrito over the already made beans and shake the casserole so that the flavors are integrated.
