Lentils a la campesina, a very rich and healthy recipe
Even when Summer is near, here in Spain, you still want a warm dish like these delicious peasant lentils. Since the typical heat of the season that is approaching us has not yet entered, we can enjoy stews like this to fill us with energy.
All the lentils they are very appropriate for enrich the body with iron, making it a healthy recipe for people with iron deficiency anemia. I encourage you to continue cooking stews like this to have all the energy for this week.
Ingredients
- 300 g of lentils.
- 1/2 onion.
- 3-4 cloves of garlic.
- 1/2 green pepper.
- 1/2 red pepper.
- 1 small red tomato
- Olive oil.
- Water.
- Salt
- Laurel.
To make this delicious recipe, the first thing we will have to do is chop all the vegetables in very tiny dice. In this way, we will avoid finding large chunks in the stew.
Then we will cook the lentils in water together with a bay leaf and a little salt. The cooking time will be about 30 minutes more or less, until we see that they are soft.
While the lentils are cooking, we will carry out a stir fried with the vegetables that we have chopped before. First, we will add the garlic, then the onion, then the peppers and, finally, the tomato. We will let everything cook until it is well poached.
When everything is poached, we will pour the sauce into the lentils. Let it cook for at least 10 minutes over low heat so that all the flavors bind.
