- We put a pan with a little oil to heat, while we beat a couple of eggs (I make the individual rice omelettes). When we have the eggs we add a pinch of salt and a little pepper to the rice. We mix it all up. If we have the hot pan, we can pour the mixture into the pan so that the omelette is made.
- We let it brown on both sides, turning it over when it touches and we can remove it when we see that it is ready.

Japanese rice omelette
The combination of what we know as omelette and fried rice, leaves us a simple, fast and exquisite dish. In areas of Korea as well as in Taiwan it is very common to find it. Broadly speaking, we can define it as a rice that is made with chicken or vegetables and that is wrapped in a layer of French omelette. Doesn't that seem like a succulent idea to you?
Ingredients for two people

- 2 water glasses
- 150 grams of chicken breast

- 400 gr of cooked rice
- 200 gr of onion
- 200 gr of peppers
- 300 gr of tomatoes
- 4 eggs
- 100 gr of cheese
- 1 tablespoon oil
- Salt and oregano
First of all, it should be noted that you can always change the peppers or tomatoes for a little tuna or another ingredient that you like the most. That said, we preheat the oven to 170º. We chop both the tomatoes, the peppers and the onion. We put them in a frying pan with very little oil. We leave them for a few minutes and remove to mix with the rice that will already be cooked. To this mixture we add a pinch of salt, spices such as oregano and beaten eggs. When everything is well mixed we will have to pour into a baking dish, previously greased with a little oil. We will let it cook for about 25 minutes. But be careful, each oven is different, so you will have to check that the upper part is firm to know that it is done. Once we remove it from the honor, we place the cheese on it. The best thing in this case is that they are slices, but you can also add a little grated cheese. Only with the heat given off by the rice tortilla will the cheese melt. When it is a little warm, we can already swell the tooth.
