Zopa de pueblo, traditional recipe

Village zopa

In the old days, when day laborers had long and hard working hours in the field, they made a traditional recipe very energetic to keep the day going strong. In addition, a lot was also done in the houses and towns to take advantage of the stale bread of the day, thus fighting hunger.

This village bull, with 'z' so as not to be confused with the typical country soup, it's kind of traditional omelette or coat with farm foods, such as potatoes, onions, peppers, garlic, garlic, eggs and stale bread. Very rich and very easy to do. We started!

Ingredients

  • 2 garlic cloves.
  • 1 medium onion.
  • 1 large bell pepper.
  • 2-3 pear type tomatoes.
  • 5 medium potatoes.
  • 1/2 kilo of stale bread.
  • 1 piece of chorizo.
  • 4-5 eggs.
  • Olive oil.
  • Water.
  • Salt

Preparation

First, we will finely chop the vegetables (garlic, onion, peppers, tomatoes) to make a sauce. We will heat a pan with about 5 tablespoons of olive oil and we will add the chopped vegetables in that order little by little. We will leave everything to poach and, finally, we will add the tomato.

While the vegetables are being poached, we are going to peel the potatoes and cut the bread into small cubes. The potatoes will be fried in a separate frying pan, draining them on absorbent paper and reserving them for later. Also, we will peel the sausage and we will chop it into small dice.

When the sauce is well poached, that the vegetables have diminished, we will add the fried potatoes together with the chorizo, we will mix well and go adding the bread little by little.

So that the zopa is not too compact, let's go adding water to the pan, so that the bread is moistened a little.

Finally, we will add the eggs, we will stir well and let it set on one side. We will turn around and curdle for the other.

NOTE:

For this recipe we will need a large nonstick deep skillet so it does not stick.
