The sweet potato is a very versatile ingredient, as soon as we can use it to prepare a sweet pudding, a cream or a salad like the one I propose today. The way I like this ingredient the most is roasted and this is how we will incorporate it into this salad to enhance that flavor and sweetness that those of us who like it so much.
The rest of the few more ingredients will have to be placed in the bowl or salad bowl in which you are going to serve the salad. And it is that you will not have to cook any, in addition to the sweet potato, to prepare it. Which means you'll have a delicious warm salad ready to eat in little more than 25 minutes. Do we start
The recipe
- 1 sweet potato
- 2 handfuls of spinach
- 4 tablespoons cottage cheese
- A handful of nuts or seeds
- Peel the sweet potato, cut it first in half and then on sticks no more than 1 centimeter thick. Then, we place the sticks on a baking tray lined with parchment paper, season with salt and pepper and place in the oven.
- We cook in the oven, preheated to 190ºC, for 20 minutes or until the sweet potato sticks are tender. When that happens we take them out of the oven and begin to assemble the salad.
- First, we place a base of spinach. Next, on one side the sweet potato sticks and on the other the cottage cheese.
- And to finish, we distribute some nuts or seeds above.
