Start the day enjoying these pancakes, that really is a good start to the day. And doing them will take you little more than 20 minutes, since there is little more to do than mix all the ingredients. What is much better to wake up and find them freshly made on the table? Totally agree.
I have already told you that I have served them but they occur to me so many accompaniments for these pancakes… classics like honey, nutritious like nut creams and refreshing like fruit. It's weekend! Combine them with what you like and feel like!
The recipe
- 3 eggs
- 60g. melted butter (plus a little more for greasing the pan)
- 150 g. milk
- 30 g. of sugar
- 150 g. Of flour
- ½ teaspoon of vanilla essence
- 12 g. chemical yeast.
- A pinch of salt
- We start by separating the yolks from the whites.
- In a bowl, lightly beat the egg yolks and mix them with milk and melted butter.
- Next add the solid ingredients: sugar, flour, salt and chemical yeast and mix again until a homogeneous mass is achieved.
- Then we mount the whites to the point of snow to later incorporate them gently and with enveloping movements into the previous mixture.
- Now that we have the table, grease a nonstick skillet and we heat it up.
- We add a little ladle of dough in the center and let it brown for two or three minutes over low medium heat, until small bubbles appear on the surface.
- Then, turn with a spatula and cook for about a minute on the other side.
- We remove the pancake from the pan and repeat the same steps with the second, until we finish them all. If you have a large enough frying pan you can make them two by two, as I did.
- In conclusion, we add our favorite accompaniment and we sat down to enjoy our fluffy pancakes.
