I don't know about you but about me "citrus" dishes I find them very refreshing in summer. A lemonade or a lemon mousse They are proposals that I would never reject. The rice with lime and coriander that I propose today may not be so attractive but it is simple to prepare and tasty despite its limited list of ingredients.
If I like this rice for something, it is because besides being a fantastic accompaniment of meat, fish or legumes, it has enough flavor to also become a great main dish. Half an hour is all you need to prepare it, do you dare to do it?

Ingredients
- 2 tablespoons of extra virgin olive oil
- 1 small onion, minced
- 2 garlic cloves, minced
- ⅓ teaspoon of salt
- ½ teaspoon black pepper
- 1½ cups long grain white rice
- 3 cups chicken broth
- 2 cups coriander leaves + 2 extra tablespoons
- 2 limes
Preparation
- In a saucepan we put the oil and poach the onion over medium heat for 5 minutes. Then add the garlic, add salt and pepper and sauté for one more minute.
- Then we rinse the rice, Add it to the casserole and sauté for a couple of minutes without stopping to stir it.
- In a food processor we place the hot broth and the coriander and crush it before adding it to the casserole.
- We remove the set and bring to a boil. Cover the rice and cook it for 6 minutes over high heat. Then we lower the heat and cook for 10 more minutes.
- Then, we remove the casserole from the heat, cover with a cloth and let it rest for 6-8 minutes.
- To finish, we add 4 tablespoons of juice lime and half grated lime and loosen the rice with a fork.
- We serve with a little coriander and the rest of the grated lime on top.
