Scrambled eggs recipe, traditional and scrumptious
Today I have prepared a very traditional recipe for Spanish gastronomy, some fried potatoes with broken eggs. This dish is very useful for any day that we do not have much time to cook, in addition to being a very well-known tapa or first dish and recommended in any bar in Spain.
All the chips is a food that Kids love it and the not so children. However, we must be careful with fried foods, as it can cause health problems.
Ingredients
- Potatoes.
- Eggs
- Olive oil.
- Salt
Preparation
First of all, to make this recipe for fried potatoes with broken eggs, we will have to make the bed of chips. For this, we will peel them and cut them into somewhat chubby sticks. Afterwards, we will wash them well to remove any remaining sand that may have fallen while we were cutting them.
Then, we will dry them well and we will fry in abundant hot oil. It is advisable that the frying of the potatoes is enough, until they are golden brown, so that they later have a point of crunchiness. In addition, we will add a little salt.
Finally, we will carry out the fried eggs. In a satin, we will put about 2-3 fingers of olive oil and when it has been heated well we will add the eggs (add a pinch of salt to the yolk). You have to be careful with this step since the yolk could set and then you could not make the broken eggs.
To plate, we will place a bed of fried potatoes and on top we will place the fried eggs, to which, with a knife, we will make cross cuts so that the yolk spilled all over the potatoes.
