Quinoa is a very interesting food due to its nutritional properties that has its origin in Latin America. It is a perfect food for people who follow vegan or vegetarian diets.

Ingredients
- 180 gr. quinoa
- 650 gr. of water
- Sal Island
- 1 small spring onion
- 50 gr. of oil
- 100 gr. blueberry
- 180 gr. feta cheese
- ½ lemon juice
- Pepper
Preparation
- We put the quinoa, water and salt in a saucepan. Cook for 15-20 minutes.
- We drain the quinoa and let it temper, stirring from time to time.
- We chop the chives into very small pieces and mix it with the quinoa.
- With a blender, we chop the blueberries a little, trying not to get excessively crushed (we can also chop them by hand with a knife).
- Add the chopped blueberries, the diced cheese, the oil, the lemon juice and the pepper to taste. We stir well and rectify the salt or lemon if necessary.
- Let cool in the refrigerator and serve cold.
Notes
If you are celiac you can substitute feta cheese for edam cheese.
