Puff pastry with meringue and almond

Palmeritas with meringue and almonds

When faced with unexpected guests, it is usually necessary to improvise; review the ingredients that one has and use creativity. These palm trees were the fruit of it; half of them went from being mere Palm Trees Hojaldre to become puff pastry popcorn with meringue and almonds.

Whoever likes meringue will enjoy this improvised dessert; whoever isn't so "sweet" will prefer its traditional version. The advantage is that doing both will only take you 50 minutes and a few few ingredients: puff pastry, butter, sugar, egg whites and almonds. Shall we improvise?

Ingredients

For 15 palm trees

  • Rectangular puff pastry sheet
  • 1 knob of butter, melted
  • 4-5 tablespoons of sugar
  • Egg whites 2
  • A pinch of salt
  • Rolled almonds

Crafting

We prepare the palm trees. To do this and as we explained on another occasion, we start by spreading a thin layer of sugar on the work surface and spreading the puff pastry on it. Brush the puff pastry on top with a little butter, sprinkle with sugar and roll over it, pressing lightly - the objective is not to stretch the dough, but to impregnate the sugar.

We mark the center of the dough and fold the ends of the dough up to the mark. We sprinkle sugar above and we pass the roller again. We repeat this operation one more time. To finish, we fold one half over the other, sprinkle sugar again and cut the dough into 1 cm portions. thick approximately.

We place the palmeritas on a parchment paper on the baking tray, pressing them lightly to settle them and leaving enough space between one and the other. We take to the fridge 10 minutes while we preheat the oven to 190º.

Palmeritas De Hojaldre

We bake the palmeritas at 190ºC for 15-20 minutes, until golden brown. We turn them over and bake them for another 4-5 minutes.

As they cool down we ride to the point of snow two whites with a pinch of salt. Once cold, spread the meringue generously over the palm trees and finish the preparation by placing some sliced almonds on it.
