Crafting

We start by spreading sugar on the work surface and spreading the puff pastry on it. Brush the puff pastry on top with a little butter and sprinkle sugar on top, subsequently passing a roller over it. We press lightly; the goal is not to stretch the dough, but to get the sugar to impregnate.

We mark the center of the mass and we bend the ends from the dough to the mark. Sprinkle a little more sugar on top and roll again. We repeat this operation one more time, this time sprinkling a little cinnamon with the sugar.

To finish, we fold one half over the other, sprinkle sugar again and cut the dough into 1 cm portions. thick approximately.

We place the palmeritas on a parchment paper on the baking tray, pressing them lightly to settle them and leaving enough space between one and the other. We put in the fridge for 10 minutes while we preheat the oven to 190º.

We bake the palmeritas to 190ºC for 15-20 minutes, until golden brown. We turn them over and bake them for another 4-5 minutes. We let them cool before serving.

Notes

I have used a normal rolling pin to impregnate the sugar, but there are also small ones of their own for these purposes. If you don't have either one, a clean glass bottle will do as well.
