  • 4 eggs
  • 200 g. white sugar
  • 40 g. brown sugar
  • A pinch of salt
  • 130g. mild olive oil
  • 150 g. greek yogurt
  • 1 teaspoon of vanilla
  • Zest of half a lemon

  1. In a bowl we mix the sifted flour with the walnut or ground almond, the cinnamon and the yeast and set aside.
  2. Then we peel and cut two apples in small dice.
  3. Now, we beat the eggs with the sugar and a pinch of salt in a large bowl
  4. Once integrated, we add the yogurt, the oil, lemon zest and vanilla one by one, beating after each addition.
  5. Add the dry ingredients to the bowl. and mix with a spatula to integrate.
  6. We then add and we mix the apple cubes previously cut.
  7. We prepare a 20×30 centimeter mold or equivalent, covering it with paper and pouring the mixture.
