Potatoes stuffed with tuna and egg

All the potatoes They are an excellent food for this time of year since they refresh us and, in addition, we are satisfied with the little appetite that we may have as a result of the heat. They also have the advantage of being low in calories when cooked, making them a great recipe for slimming diets.

We have filled these potatoes with a exploitation of the filling of some cannelloni. In this way, we take advantage of the remains of a recipe to make a new one just as rich as the previous one. Nothing is thrown away in the kitchen!

Ingredients

  • 3 large potatoes.
  • 2 eggs.
  • 1/4 onion.
  • 2 cans of tuna.
  • Grated cheese.
  • Fried tomato.
  • Salt

Preparation

First of all, we will wash the potatoes, ideally with a small special brush for the kitchen. We will place these in a deep plate and cover them with plastic wrap which will make some small holes. We will put it in the microwave for about 6-10 minutes at maximum power.

Meanwhile, we will put the eggs to cook and chop the onion. We will fry this a little in a pan with a drizzle of olive oil. We will cut the eggs into small cubes.

With a bowl, we will put the two cans of tuna well drained, the poached onion, the chopped eggs and the cooked potato meat. We will stir it well and add the fried tomato, stirring again.

Finally, we will fill the potatoes with this mixture and add the grated cheese on top. We will gratin about 10 minutes in the oven at 180ºC (already preheated).
