Ingredients
  • 120 g. macaroni
  • 1 cebolla
  • 1 eggplant
  • 150 g. tomato sauce
  • 1 cayenne pepper
  • ½ glass of red wine
  • 12 pitted olives
  • Olive oil
  • Sal Island
  • Grated cheese (to decorate)

Preparation
  1. We chop the onion in julienne strips and fry it in a large frying pan with a drizzle of oil until it begins to colour.
  2. Then, add the eggplant cut into cubes (one centimeter more or less) and sauté for 15 minutes, until it is tender.
  3. Then we lower the heat and add a pinch of salt, the tomato sauce and the chilli cut in half and mix.
  4. Immediately cover with red wine and let the sauce reduce for about 15 minutes or until thick
  5. We take advantage of that time to cook the macaroni and cut the olives in half.
  6. Once the sauce is made, we serve the macaroni for this on top, adding to the plate, in addition, the olives and a little grated cheese.
