We have opted for a neutral version of this sauce, but you can add spice If you want. As for the cheese, I have added it simply to decorate the dish and I don't think this sauce needs cheese, in fact I think it should be the protagonist without anything dampening its flavor. The recipe
- 120 g. macaroni
- 1 cebolla
- 1 eggplant
- 150 g. tomato sauce
- 1 cayenne pepper
- ½ glass of red wine
- 12 pitted olives
- Olive oil
- Sal Island
- Grated cheese (to decorate)
- We chop the onion in julienne strips and fry it in a large frying pan with a drizzle of oil until it begins to colour.
- Then, add the eggplant cut into cubes (one centimeter more or less) and sauté for 15 minutes, until it is tender.
- Then we lower the heat and add a pinch of salt, the tomato sauce and the chilli cut in half and mix.
- Immediately cover with red wine and let the sauce reduce for about 15 minutes or until thick
- We take advantage of that time to cook the macaroni and cut the olives in half.
- Once the sauce is made, we serve the macaroni for this on top, adding to the plate, in addition, the olives and a little grated cheese.
