Lentils with laurel, getting ready for back to school
And we are already in September! It's back to school, back to work, the smell of new books, the reunion with classmates ... It is an intense season that is often accompanied by depression or post-holiday stress And, although it is still hot, it is worth giving our body a boost with a good plate of lentils to start the new season with energy.
I usually cook lentils with more spices such as cumin or ginger, but this time we are going to cook them in a much simpler way, equally rich and very low in calories, since we are going to do without fatty ingredients.
Ingredients:
- 250 gr. lentils
- 1 Tomate
- 1 hoja de laurel
- 3 cloves of garlic
- 2 tablespoons olive oil
- Paprika
- Sal Island
- Pepper
Preparation:
In a pot, heat the olive oil and add the garlic cloves, cut in half and unpeeled. We will cook them over low heat for a few minutes, taking care that they do not burn. When they are ready add a liter and a half of water, the paprika, the salt, the pepper and the bay leaf. We raise the heat and bring to a boil.
We wash the tomato well, cut it into quarters and add it to the pot, followed by the lentils, which we will have previously soaked in water throughout the night or, at least, for a few hours. We leave over medium heat until the lentils are done and the sauce has reduced to our liking.
