Grandma's stew with croutons

As you will surely be saturated with so many excesses and such a variety of food during these dates, today I have prepared a recipe from the old days, a grandma's pout with croutons and noodles. A good broth is always good for this cold and for the stomach to rest and take a break from so many excesses.
Ingredients
For the base of the stew broth:
- 300 g of chickpeas.
- 2 liters of water.
- 1/2 chicken or hen.
- 1 piece of ham.
- 1 piece of beef.
- White bone (pork leg bone in salt).
- Spine bone.
- 1 piece of rib.
- 1 piece of añejo.
- 1 piece of pork bacon.
- 2-3 potatoes.
- 2 carrots
- 1 leek
Optional Ingredients:
- Boiled eggs
- York ham.
- Fried bread.
- Noodles.
Preparation
The first thing we will have to do is a good base of grandma's stew broth. To do this, we will have to soak the chickpeas the night before, so that they are somewhat more tender and have doubled their volume. After tonight, we will wash the chickpeas well and take it to a pot with water.
While the chickpeas are boiling we wash the bones, the añejo and the bacon to remove the excess salt that they bring and we add it together with the meat (chicken, veal and ham) to the pot. In addition, we will peel and wash the vegetables and potatoes very well and also add them to the pot.
When everything starts to boil, we will see how a small foam layer. This foam results from the impurities of the meat and bones, so we will remove it all with a slotted spoon. When no more foam comes out, we will close the pressure cooker and when the steam starts, we will count one hour.
After that hour we will strain the broth to another container and reserve the meat and vegetables to use them at another time. The meat is used in another recipe called old clothes or to make CroquetasYou can use the vegetables for a puree for the little ones.
Once the broth is strained, we will put a small pot to cook the noodles. Once it boils, add the noodles and cook them for about 8-10 minutes. We will add the ham, the egg and the fried bread cut into cubes.
