Fusilli all'arrabbiata (spirals to rabiata), Italian recipe
That my husband has lived in Italy for years has many advantages and one of my favorites is, without a doubt, that he can tell me recipes or culinary techniques typical of the country because he has lived them closely, he has seen how they were made in an original way. I love being able to take that into my kitchen and get a taste of what each recipe truly looks like.
The recipe that I bring you today is the well-known rabiata sauce (angry), a simple sauce whose main ingredient is tomato and, of course, you can not miss the cayenne pepper or chilli! If not, it would not be angry! (which by the way, means pissed off).
Ingredients
- 3 cloves of garlic
- 4 cayenne or chilli peppers
- 3 tablespoons olive oil
- 1 can of tomato (small)
- 1 ripe tomato
- 1 teaspoon dried parsley
- Sal Island
- Pepper
- 200 gr of fusilli (spirals) or any other type of pasta that you like
Crafting
In a frying pan, heat the olive oil and add the garlic cloves cut into thin slices and the cayenne or chilli peppers. When they have taken a little color, add the diced tomato, the tomato can and a little water. We add the salt, pepper and parsley and let it simmer, stirring from time to time to avoid burning until we have a consistent sauce.
On the other hand, we boil the pasta following the manufacturer's instructions and, when it is ready, we drain it and mix with the sauce.
