San Juan is approaching, a festival that is celebrated in several cities in Spain. In Catalonia this festival is accompanied by some very good cocas, they are prepared with cream, fruit, pine nuts and a very typical one of here the crackling coca.

- 2 eggs
- 150 gr. sugar
- 100 ml of water
- 100 ml. mild olive oil
- 4 tablespoons of milk
- 2 tablespoons of cognac or anise
- Zest of a lemon
- 220 gr. Of flour
- 1 sachet of backing powder
- 50 gr. pine nuts
- 100 gr. of chicharrones
- We take a bowl we put the eggs and the sugar we will beat it very well until they turn white.
- Once it is well beaten, add the water, milk, oil, brandy and lemon zest. We will beat everything.
- Then we put the flour together with the yeast and the pork rinds that we will have finely chopped, we will mix everything very well.
- In a mold for the oven, we will spread with butter or we will put greaseproof paper.
- We will add the dough and put it in the oven, which will already be hot at 160ºC.
- When the dough has risen a bit, we will remove it from the oven.
- We will paint it with beaten egg, add the pine nuts and sprinkle with sugar. We will put it back in the oven, about 30 minutes.
- When we see that it is a little golden, we prick with a toothpick and if it comes out dry, it will be ready.
