The hummus of a few years now has gained presence at our table. In these pages there are several versions that we have proposed: classic, sweet potato, roasted peppers... Today we add one more to the list: Cauliflower hummus one of my favorites!
Cauliflower hummus is no more difficult than other hummus to prepare. You have to spend 20-30 minutes, yes, to roast the cauliflower in the oven with a few spices thanks to which the hummus will have an extra flavor. Do you dare to prepare it? You can take it as a snack with a toast of whole wheat bread or with vegetables al dente.
- 200 g. chopped cauliflower
- 2 + 1 tablespoons olive oil
- 1 teaspoon curry powder
- ½ teaspoon sea salt
- ¼ teaspoon freshly ground pepper
- 60 ml. lemon juice
- 425 g. cooked chickpeas, rinsed and drained
- 35 g. sesame seeds
- 1 clove of garlic, peeled
- 1 teaspoon ground cumin
- Paprika, almonds and olive oil to decorate.
- We preheat the oven at 230 ° C and line the tray with greaseproof paper.
- In a bowl we mix the bouquets of cauliflower with 2 tablespoons of olive oil, curry, sea salt and freshly ground pepper.
- Afterwards, we spread the cauliflower on the oven tray and we bake 20 minutes or until tender, turning after 10 minutes. Once tender, remove from the oven and let cool.
- With a food processor Add the remaining tablespoon of olive oil, the lemon juice, the chickpeas, the sesame seeds, the garlic, the cumin and the baked cauliflower. Blend until smooth.
- We reserve the cauliflower hummus in a container in the fridge until serving time, when we will accompany it with paprika, some almonds and a little olive oil.
