Cauliflower hummus

The hummus of a few years now has gained presence at our table. In these pages there are several versions that we have proposed: classic, sweet potato, roasted peppers... Today we add one more to the list: Cauliflower hummus one of my favorites!

Cauliflower hummus is no more difficult than other hummus to prepare. You have to spend 20-30 minutes, yes, to roast the cauliflower in the oven with a few spices thanks to which the hummus will have an extra flavor. Do you dare to prepare it? You can take it as a snack with a toast of whole wheat bread or with vegetables al dente.

Ingredients
  • 200 g. chopped cauliflower
  • 2 + 1 tablespoons olive oil
  • 1 teaspoon curry powder
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground pepper
  • 60 ml. lemon juice
  • 425 g. cooked chickpeas, rinsed and drained
  • 35 g. sesame seeds
  • 1 clove of garlic, peeled
  • 1 teaspoon ground cumin
  • Paprika, almonds and olive oil to decorate.

Preparation
  1. We preheat the oven at 230 ° C and line the tray with greaseproof paper.
  2. In a bowl we mix the bouquets of cauliflower with 2 tablespoons of olive oil, curry, sea salt and freshly ground pepper.
  3. Afterwards, we spread the cauliflower on the oven tray and we bake 20 minutes or until tender, turning after 10 minutes. Once tender, remove from the oven and let cool.
  4. With a food processor Add the remaining tablespoon of olive oil, the lemon juice, the chickpeas, the sesame seeds, the garlic, the cumin and the baked cauliflower. Blend until smooth.
  5. We reserve the cauliflower hummus in a container in the fridge until serving time, when we will accompany it with paprika, some almonds and a little olive oil.
