It is a very complete salad; You can serve it as a first course at lunch or enjoy it as a single dish at dinner. Ingredients

For two people

  • 4 buds
  • 4 slices of Iberian ham
  • 12 walnuts
  • 120 gr of mushrooms

To caramelize the walnuts:

  • 75 ml water
  • 125 g. of sugar

For the dressing

  • 1 tablespoon of mustard
  • 1 tablespoon honey
  • 1 tablespoon vinegar
  • 1 tablespoon of lemon juice
  • 4 tablespoons of oil

Crafting

For caramelize the walnuts We begin by heating the water and sugar in a saucepan. Once the mixture starts to boil, add the walnuts and cook over medium heat for approximately 10 minutes without stopping stirring - the syrup will take on a more golden color and the walnuts will begin to crystallize. Then we lower the heat and continue stirring until the caramel evenly covers the nuts. Remove the walnuts with a slotted spoon on a parchment paper, separate them with the help of two teaspoons and let them cool.

The next thing we will do is clean the mushrooms, laminate them, season them and sauté them in a pan with a splash of oil.

Now that we have everything ready, we assemble our salad of buds. We place the buds open in half on a tray. On each of them we place a slice of ham. Next, we place the caramelised walnuts on top, already cold, and the warm mushrooms.

We water with the dressing that we prepare combining all the ingredients: mustard, honey, vinegar, lemon juice and oil; and beating them lightly.

Notes

Whenever you work with syrup or caramel You must be very careful, since it reaches a high temperature and burns can be important.

Caramelized walnuts contain many calories and it is not convenient to abuse them. Whoever is on a diet, must do without them.
