Ingredients:
2 plywood mackerel.
4 medium potatoes.
3 garlic
1 chilli
Virgin olive oil.
Sal Island
Vinegar and parsley
Preparation:
We start by washing, peeling and cutting the potatoes into large slices. Then we fry them, reserving and trying not to get cold.
Mackerel fillets have to be whole so it is advisable to tell our regular fishmonger to prepare it for us. The mackerel fillets have to be seasoned to taste and brown on both sides for a few minutes in a frying pan with little oil.
Then, apart, sauté the filleted garlic, add the chilli, the vinegar and let it boil for a minute before pouring it all over the mackerel loins. To finish, we sprinkle a little parsley.
