Hello! Today I have brought you a delicious recipe that you are going to suck your fingers. It's about a baked fish with baked potatoes, tomato and carrot and garnished with a tasty vinaigrette.

El baked fish accompanied by vegetables is always good for slimming diets. At the beginning of the year, you always want to lose those extra pounds that we have gained during the Christmas holidays.

Ingredients

  • 2 panga fillets.
  • 3 potatoes
  • 2 tomatoes.
  • 2-3 carrots.
  • Chopped parsley.
  • Salt
  • Thyme.
  • Olive oil.

Preparation

First we will take the fish and we will open it to remove the loins. You can also request this operation from your trusted fishmonger, or even buy them frozen. We will arrange the loins in a deep plate, and we will add salt on both sides and bathe it with lemon juice. We will leave about 10 min for it to gain flavor.

Meanwhile, we will cut the vegetables and potatoes. We will wash everything very well and remove the skin, not the tomato if you don't want to. Then we will cut everything into slices 1–2 cm thick.

Then we will place layers of vegetables and finally fish in a deep oven dish. First, we will place a drizzle of olive oil in the bottom of the pan, then the well-ordered potatoes, then the carrots and then the carrots. Finally, we will put the fish, and we will sprinkle it all with a vinaigrette.

Bliss vinaigrette it is done as follows. In a small bowl we put, 5 tablespoons of olive oil, 3 tablespoons of fried tomato, 3 drops of lemon juice, parsley to taste, drizzle of wine or beer and a little salt. We will stir everything well with a rod until we see that all the ingredients are united (emulsify).

Finally, we will put the oven at 180ºc for about 30 min or until the potatoes are soft. You already know that the cooking time is approximate depending on the type of oven you have.
