Aubergines with cottage cheese, to enjoy on Valentine's Day

Valentine's Day is approaching and to celebrate it I propose a quick and easy recipe with which to surprise your partner. A very tasty combination of aubergines, fried tomato with fried bacon and cottage cheese that you can have ready in 30 minutes.

It is a perfect recipe for those who do not dare to get into the stove normally, easy and with a good presentation. You can enjoy it in a romantic dinner and finish with a dessert also made at home, a cheesecake and strawberry jam. Is there a better way to celebrate Valentine's Day and surprise your partner?

Ingredients (2 people)

  • 2 small aubergines or a large one
  • 1 / 2 cebolla
  • 300 gr. of natural crushed tomato
  • 40 gr. Parmesan
  • 100 gr. curd
  • 2 thick bacon slices (chopped into strips)
  • Olive oil
  • Sal Island
  • 1 teaspoon of sugar

Crafting

We started peeling the aubergines and cutting them into thin slices. We place them on the baking sheet and sprinkle them with a little oil. Next we sprinkle salt and bake for approximately 10 min at 190º.

We take the time to cook the crushed tomato in a saucepan with a little salt and sugar and chop and poach the onion in a frying pan with a little oil.

When the onion is transparent, we add the bacon to the pan and cook it for a couple of minutes so that it begins to take color. We then dump it on the tomato and let it finish cooking.

We assemble the plate layering the slices of aubergine, tomato with fried onion and bacon, and Parmesan cheese. We repeat the previous step and finish by spreading crumbled cottage cheese on the surface.

Bake at 180º, approximately 1 minute so that the cheese melts and takes heat.

Notes

Cottage cheese is a mild-flavored dairy derivative with a fat content it is less than that of most cheeses. If you want to make this recipe lighter, you only have to eliminate the bacon sauce, in this way you will considerably reduce the fat content of this dish.

Eggplant dries a lot cooking it in the oven. If you prefer, you can fry them in a pan or cook them on the grill. If you do it like this, don't forget to drain the aubergines on absorbent paper.
