We recently saw a carrot and zucchini cream, very easy to do and that more or less is something that we all usually do at some time. Today I bring you another cream, but this time it is something a little different that of course is worth trying because the result is surprising, a chive creamto very warm.

Ingredients:
- 2 onions White
- 2 tablespoons of olive oil
- A bit of butter
- Sal Island
- Pepper
- 2 or 3 tablespoons flour (only if it is necessary)
- Sugar (only in the case of not having white onions)
Preparation:
To begin with, we are heating the olive oil and then we add the onion julienned, very thin. We are going to cook it over low heat and with a lot of patience because we want it to caramelize. To achieve this without burning it is important to always keep the heat low, stir from time to time and close the pot.
Add the salt (which will help the caramelization process), the pepper and, if you don't have white onions, add a little sugar. Mix and continue cooking over low heat. After about 15-20 minutes the onion will turn a golden color. Once this is achieved, add water, the amount will depend on how many people you are going to be.
Also add the butter (It is actually preferable to add it at the same time as salt, pepper, etc, but I forgot) and mix everything well. When it starts to boil, pass everything through the mixer and, if necessary, add 2 or 3 tablespoons of flour, depending on how thick you want to give the cream. *
* When you add the flour, go back through the blender to remove lumps.

I added some croutons although there are several possibilities. The traditional thing about this cream is to add a piece of bread, grated cheese and gratin it.
