Wholemeal sponge cake with apple

Wholemeal sponge cake with apple, delicious and juicy cake ideal for breakfast or snack. These cakes are very juicy since the apple adds moisture to the dough and is juicier.

It would also be a useable sponge cake, in my case the apples were already ripe and were circling the fruit bowl. So you can use the fruit that remains ripe.

Ingredients
  • 3 glasses of whole wheat flour
  • 2 yogurts
  • 4 eggs
  • 2 apples
  • 1- ⅕ of cane or coconut flour
  • ½ glass of mild sunflower or olive oil
  • 1 sachet of backing powder
  • ½ teaspoon baking soda
  • 1 teaspoon of cinnamon
  • Assorted seeds

Preparation
  1. To make the whole apple sponge cake, we will turn the oven to 180ºC. We take a bowl we put the eggs and the sugar, we beat it. Then we add the yogurts, mix well.
  2. We wash the apples.
  3. Add the oil and mix everything well. We grate the apple or we can cut it into pieces.
  4. We add the apple to the dough and mix. In another bowl we put the dry ingredients such as whole wheat flour, add the cinnamon, the bicarbonate, the yeast and mix.
  5. We will gradually add this mixture to the dough, mix well until well incorporated. We will finish by adding mixed seeds. The amount will be to your liking.
  6. We prepare a mold, line it with greaseproof paper and add the dough. We add a few seeds on top of the dough before putting it in the oven.
  7. We put it in the oven for 40-50 minutes or until it is done. To do this we will prick with a toothpick, if it comes out dry it will be ready.
  8. With these quantities, a good sponge cake comes out, the mold is 20 x 30cm.
