Ratatouille is a well-known and widely consumed dish in Spanish cuisine.. It is a vegetable-based dish, very complete and full of essential vitamins and nutrients. The ratatouille allows to make several variations, you can add ingredients as I have done in this case. But they can also be removed based on taste. However, the base is always the same and the result is always spectacular.

This dish is perfect for children who reject vegetables, as the taste of the tomato slightly camouflages the flavor of the vegetables. The pisto you can serve as a main dish for a light dinner or as an accompaniment to various dishes. The original recipe belongs to La Mancha cuisine, in fact its full name is Manchego pisto and in this beautiful land, it is served accompanied by a fried egg. Without further ado we get down to the kitchen!

Ingredients
  • 2 zucchini
  • 2 eggplants
  • Peppers of various colors, one red, one green and one yellow bell pepper
  • 250 gr of mushrooms
  • 150 gr of fresh beans
  • 100 ml tomato sauce
  • Extra virgin olive oil
  • shawl

Preparation
  1. First we are going to clean the peppers very well, remove the stem and remove all the seeds.
  2. Cut the peppers into small squares, making sure that all the vegetables are of a similar size.
  3. Afterwards, we are going to clean the aubergines very well and without removing the skin, we chop them as we did with the peppers.
  4. Now, we do the same with the zucchini, we wash them very well and chop without removing the skin.
  5. We put a pan with a good bottom on the fire and add a good drizzle of virgin olive oil.
  6. Once it is hot, add the aubergine, salt and cook over medium heat until it is completely cooked.
  7. We reserve the aubergine and grease the pan again, this time with very little oil.
  8. Add the zucchini and cook it completely, reserve together with the aubergine.
  9. Now, we fry the three types of pepper all together, add salt and cook well.
  10. While the vegetables are cooking, we are going to clean the earth from the mushrooms completely and chop well.
  11. We also clean the beans and wash with cold water.
  12. When the peppers are ready, we reserve them with the rest of the vegetables.
  13. In the same pan, sauté the mushrooms for a few minutes and add to the vegetables.
  14. Now, we sauté the beans for a minute and again add to the vegetables.
  15. To finish, we will use a wide casserole with a low bottom.
  16. Add all the vegetables already cooked and mix.
  17. Finally, we add the tomato sauce and stir well.

Notes
It is very important that the vegetables are cooked one by one, since each product requires a different cooking time. If we do them all together, some will be outdated and others undercooked.
