Ingredients
- 2 sheets of puff pastry
- 1 eggplant
- 2 zucchini
- 1 green pepper
- 1 red pepper
- 2 onions
- Fried tomato
- A handful of raisins
- A handful of pine nuts
- 1 egg
Preparation
- In a frying pan without oil we toast a handful of pine nuts, remove and reserve. We will soak the raisins in a glass of water.
- We wash and cut all the vegetables into small pieces.
- In a large casserole, add a jet of oil, add the onion, let it simmer for a few minutes, followed by the rest of the vegetables except the fried tomato.
- We will let it cook until everything is done and well poached in the middle of cooking we will add the raisins.
- We add the fried tomato, we will add and stir until we leave it to our liking and flavor.
- We put salt and pepper.
- We spread a puff pastry in a baking dish.
- We put all the vegetables in the dough without reaching the edges, on top we will put the toasted pine nuts.
- We place the other puff pastry sheet on top and roll up the edges. We beat the egg and paint the entire mass with it. We make a hole in the middle of the dough so that the steam comes out.
