- 600 gr. loin tape in fillets
- 1 cebolla
- 1 jar of cream
- 70 gr. fried almonds
- 100 ml. white wine

- To prepare the tenderloin in almond sauce and cream, we first season the pieces of meat.
- We put flour in a plate and we pass all the loin fillets through the flour.
- We take a casserole and put a jet of oil to heat over high heat, add the pieces of loin and brown them on both sides, remove and reserve.
- We chop the onion very small, we poach it in the same pan where we have browned the meat.
- We chop the almonds in a mincer until they are ground and almost ground.
- Add the white wine, let it reduce.
- Add the cream and the almond, let it cook.
- Add the pieces of loin and leave it for about 5 minutes. If we see that the sauce thickens, we can add more cream, milk or water. Until leaving it at the point of sauce that you like.
- Add a little salt and pepper to the sauce, taste and rectify.
- So that we have a more complete dish, we can accompany the loin dish with some fried potatoes.
