Tangerine and vanilla flan

All the oranges and tangerines They are very typical at this time of year, since with the cold of Autumn it is more common for us to catch a cold, so a large contribution of vitamin C is a good home remedy for our defenses to be active and take care of our body.

For this reason, to take advantage of oranges or mandarins that are somewhat stale, we have prepared some delicious puddings of tangerines. In this way, this dessert can become a great snack for children, and thus, provide them with that extra vitamin C.

Ingredients

  • 1/2 liter of mandarin or orange juice.
  • 6 eggs.
  • 120 g of sugar.
  • 1 tablespoon of essence of vanilla or branch.
  • Sugar and a splash of water for the caramel.

Preparation

First, we will prepare the candy. To do this, we will take a casserole and add 2-3 tablespoons of sugar and a small splash of water. We will put a low fire, and let it cook until we get a blond caramel.

Subsequently, we will squeeze the tangerines or oranges, straining the juice very well to remove any skin. This juice, we will put it over medium heat, and when it starts to boil, we will leave a few minutes and set aside.

On the other hand, while the caramel is cooking and the juice is boiling, we will put in a bowl the 6 eggs. We will beat and add the sugar little by little until we get a homogeneous mixture.

Finally, we will put the two mixes together (eggs with sugar + orange juice) and we will pour it into an individual mold or mold, which previously we had placed the caramel in it. Bake in a bain-marie at 170 ºC for about 35 minutes, or until we see that it is fully set.
