Sweet potato and almond panellets

Sweet potato and almond panellets, a traditional sweet on these dates of All Saints. A simple sweet easy to prepare at home. The traditional ones are made of almonds and pine nuts but now they are prepared in various flavors, such as coconut, pumpkin, sweet potato like these that I propose today.

We are in times of sweet potatoes and its duration is very short, with them we can prepare creams, purees and sweets like these sweet potato and almond panellets, ideal for Halloween night.

Ingredients
  • 200 gr. roasted sweet potato
  • 300 ground almonds
  • 200 gr. sugar
  • 2 eggs
  • A handful of grated almonds, pine nuts ...

Preparation
  1. To make the sweet potato and almond panellets, we will start by preparing the ingredients. We turn on the oven to 200ºC and roast the sweet potatoes. Let it cold down.
  2. We remove the pulp from the sweet potato and mash it with the help of a fork or mash it.
  3. In a bowl we put the ground almonds, the roasted sweet potato and the sugar. We beat an egg and add it to the mixture. We mix everything very well, you have to be a compact mass.
  4. We will wrap the dough with plastic wrap making a roll. We put in the fridge for a few hours or from one day to the next.
  5. We take the dough out of the fridge, remove the film and make balls of the same size with the dough.
  6. We beat the other egg, in a bowl we put sliced ​​almonds, pine nuts….
  7. We take the balls, we pass them through the beaten egg and then through the chopped almond or pine nuts.
  8. In a baking tray, we will put a sheet of paper and we will put the panellets, we put the tray in the oven and we will have them for about 10 minutes, being careful not to burn, they only have to brown a little.
  9. When they are we take them out of the oven, let them cool and ready to eat.
