Stuffed squid

Today I bring you the recipe for a dish that makes your mouth water just by looking at it, especially for those of us who love seafood and other seafood. It is about stuffed squid with prawns and garlic. A succulent dish for many that has a laborious elaboration but very simple if it is done with calm and dedication.

Ingredients
  • 1 kg of squid
  • 500 grams of prawns
  • 4 cloves of garlic
  • Sal Island
  • Olive oil
  • Paprika
  • Parsley

Preparation
  1. The first thing we will do is clean the squid well and thoroughly, leaving only the body and removing the tentacles that will serve to fill them together with the prawns. Once they are clean, we will put them aside on a plate with a little salt on top.
  2. Next, we will do the filler mix. To do this, we will use a frying pan to which we will add a splash of olive oil. When it is hot we will add the garlic cloves until golden brown. Then we will add all the prawns (already peeled) and the tentacles that we have taken from the squid before. We will fry them a little (not much). We add a touch of salt.
  3. With the shrimp shells, we will make a rich broth that will serve us both for this recipe and to freeze for paellas and other fish dishes. Add a little (approximately 500 ml) of water to a saucepan and put the prawn shells. We will just wait for it to boil. We will strain and half of this broth will serve us to finish making our stuffed squid.
  4. Once we have the filling done, we will have to chop it with a mincer or mixer to get a homogeneous mixture. With her, we will fill each and every one of the squids, putting a wooden stick so that the mixture does not come out.
  5. Next, in a pot, add some of the broth that we have previously boiled, and add the squid. We add a little more salt to the mixture and parsley cut, along with half a teaspoon of sweet paprika. We let do over medium heat for about 25 minutes approx.
  6. And ready! Stuffed squid ready to eat ...
