We are aware that today's recipe cannot be liked by everyone. The vegetable stew It does not have a very good reputation, especially among children and adults who do not like eating vegetables at all, at least on the palate. Still, the vegetable, like the fruit, is a very healthy source of fiber that feels good to the body and helps us clean our interior. What you sure do like are the potatoes that accompany it, and the pieces of beef, unless you are vegan and do not want to know anything about what comes from animals. If you are not one of the latter, you can give this stew with potatoes and pieces of beef a chance that we put so much love on you.

- 200 grams of green beans
- 100 grams of peas
- 120 grams of beans
- 2 medium carrots
- 4 medium artichokes
- 3 medium potatoes
- 500 grams of beef in pieces
- ½ onion
- 2 cloves of garlic
- 1 liter of water
- Olive oil
- Saffron
- Sal Island
- The first thing we will do is put a little of olive oil. When it is hot, we will add the stocking onion cut into very thin slices together with the two cloves of garlic cut into two pieces each. We stir well and fry a little.
- Then we add all the vegetables selected above: artichokes cleaned and halved, carrots peeled and sliced, green beans cut into pieces, peas and lima beans.
- We add a little salt and saffron and we stir again. We leave it to simmer for one two or three minutes.
- The next thing we will take will be the peeled and cut potatoes in medium pieces. And finally the beef also cut into small pieces. We stir well and add a pinch of salt and a little more saffron again. We allow two or three more minutes for the flavors to mix and then we cover with water. We add approximately 1 liter of water and we let do over medium heat.
- We stir and taste the salt every little bit and when the meat and potatoes are tender, we set aside and place them.
