Ingredients
  • 500 grams of fresh spinach
  • 200 grams of green asparagus
  • 4 cloves of white garlic
  • ½ onion
  • 2 eggs
  • Olive oil
  • Sal Island
  • Black pepper
  • Garlic powder

Preparation
  1. The first thing we will do is thoroughly wash both the green asparagus and the fresh spinach. The latter, once washed with hot water, we will let them drain. Meanwhile, with the asparagusWe will cut the ends and leave them ready to be turned around in a pan with a little olive oil. We want to roast them a little not to leave them too done. Once we have them done, we set them aside on a plate and cut them into small cubes.
  2. In the same pan where we have made the asparagus, we add a little olive oil again and we add the 4 garlic well peeled and sliced. We do the same with the half an onion. We let them sauté a little and then we add the well drained spinach.
  3. We lower the heat to half and we stir every little bit. The spinach will release a lot of water so when they are almost without water, add the asparagus and add the shawl, black pepper and garlic powder. If we raise the heat, the spinach water will be consumed sooner.
  4. The next step will be to add two eggs and stir them to make the scrambled eggs. We leave about 5 more minutes and set aside.
