Spinach and mozzarella quiche

Spinach and mozzarella quiche, a very rich and easy to prepare savory cake. This cake can be prepared with any dough base, such as puff pastry, breezy dough or as I have put the shortcrust dough.

It is a very simple and quick recipe to make, it is ideal to prepare at dinners with family or friends. We can change the spinach for other vegetables, or put another cheese. It looks great !!!

Ingredients
  • 1 sheet of shortcrust pastry
  • 1 bag of spinach, or frozen 250 gr. or 400 gr.
  • 3 eggs
  • 200 ml. liquid cream
  • Grated cheese about 50 gr.
  • 250 gr. fresh mozarella cheese
  • Salt and pepper

Preparation
  1. We will turn on the oven at 180º C.
  2. We take a mold and put the broken dough, cut what is left over from the edges and leave it in the fridge.
  3. In a bowl we put the eggs and the cream a little salt and pepper, we beat everything well.
  4. Once beaten, we put a little grated cheese, we mix it.
  5. We put the spinach, if they are fresh, we sauté them for a few minutes in a pan and if they are frozen, we just have to defrost them and drain them well, we put them in the previous mixture.
  6. We mix everything, take the dough out of the fridge and cover the entire dough with this cream.
  7. We cut the mozzarella into slices. We put them on top all over the base of the cake.
  8. We put the quiche in the oven and leave it until it is ready, well browned, about 30-40 minutes.
  9. Once ready, we take it out.
  10. And ready to eat !!!
