Ingredients
  • 4 onions
  • 1 bay leaf
  • 1 liter of vegetable stock
  • ½ teaspoon ginger
  • 1 teaspoon of turmeric
  • 1 garlic clove
  • Grated cheese

Preparation
  1. To make the onion and spice soup, first peel and cut the onion into very fine strips.
  2. In a large pot put a splash of oil over medium heat, when it is hot add the chopped onion. We will stir for about 10 minutes.
  3. When the onion is transparent, add the minced garlic, stir. Add the bay leaves, turmeric and ginger, stir everything carefully so they don't burn and leave for about 10 more minutes.
  4. Add the vegetable broth, when it starts to boil, leave it over medium heat and let it cook for about 40 minutes. If it gets too dry, you can add more broth or water.
  5. When it is ready, we taste the broth to see how it tastes, if necessary we add more salt and pepper. If you like it with more flavor you can add more turmeric and ginger.
  6. When serving it, we will put the soup in small saucepans or plates where we will put grated cheese on top.
  7. If you like, you can put the dishes in the oven for a few minutes to gratin and serve them very hot. It is a very good dish.
