Ingredients
  • 2½ cups of wheat flour
  • 1 teaspoon baking powder
  • 3 eggs
  • 1 cup of white sugar
  • 90 grams of butter at room temperature
  • 1 teaspoon of vanilla essence
  • 2 tablespoons lemon zest

Preparation
  1. We mix and sift the flour and chemical yeast.
  2. We preheat the oven to 180ºC and line the baking tray with greaseproof paper.
  3. In a bowl we beat the eggs with the sugar until white.
  4. Then we add the butter and the vanilla essence and beat until integrated.
  5. Then gradually incorporate the flour and the lemon zest with the help of a spatula until a homogeneous mixture is obtained.
  6. With the help of two spoons, we are taking portions of dough and placing them on the baking tray, separating them from each other. At this point, you can paint the tops of the cookies with a little beaten egg if you want.
  7. Bake at 180ºC for 15 minutes or until golden brown.
  8. Then, we remove the rustic lemon cookies from the oven and let them cool on a rack.
