Chicken roti stuffed with cheese and dates
At home we often have some sausage for dinner along with a salad and bread. Lately I've been in love with chicken stuffed with dates and cheese, it's really very good and it's very mild in flavor. I love the combination.
To pay homage to this sausage, we have made this chicken roti stuffed with cheese, dates, walnuts and asparagus at home. And although it obviously doesn't taste the same, it seemed like a good way to cook chicken at home. We are also not adding many calories, and above all, as always, everything made at home tastes better. Perfect to present as a snack or dinner!
- 1 whole chicken breast
- 2 large green asparagus
- 6 pitted dates
- 6 peeled walnuts
- 3 wheels of a goat cheese roll
- olive oil
- pepper

- Let's start with the chicken, we are going to use two lettuces and if we buy them at the butcher we can ask that we have them in a booklet, and we save work at home. If we don't do it quietly at home, season and reserve.
- We remove about two meat fingers from each fillet, we will use it to fill the roti, it will make it have more body. Chop with the mincer.
- In a bowl add all the ingredients, except the asparagus, and season.
- We are going to steam the asparagus for 5 minutes, they will finish cooking in the oven along with the chicken.
- On a table or work surface put the chicken books, put the asparagus and then half of the filling.
- To close the roti, we will use a kitchen twine to tie meats. We will pass the string through the length and width of the roti, so that nothing comes out of the filling. Repeat the same operation with the other breast.
- Once ready, we are going to mark the stuffed breasts. To do this, in a very hot pan with a little olive oil we will put the roti and move so that each of its faces are marked. Just brown, we don't want to cook them there.
- In a baking dish we will put the rotis with a little oil and bake for 20 minutes at 180º.
- After this time and out of the oven we will let it temper to carefully remove the strings, we can now cut it into slices!
