Fried orange bagels

It still smells like Easter at home. It is the fault of these fried orange donuts, a new recipe to add to my particular recipe book. In terms of traditional recipes "each teacher has his booklet" and I liked learning a new way to prepare them.

The peculiarity, to call it somehow, of these fried orange donuts, is the way in which they are prepared and flavors the oil which will later be used in the dough. A trick that I have learned this year and that I will use to make these great treats, often.

Ingredients

  • Zest of 1 orange.
  • Peel of 1 lemon
  • 150 gr of sugar
  • 2 eggs.
  • 150 g. of orange juice.
  • 150 g. Of olive oil.
  • 600 g. of pastry flour (the one you ask for can be more or less)
  • 2 double sachets of raising agents
  • A pinch of salt.
  • sunflower oil for frying.
  • sugar and cinnamon to sprinkle

Crafting

We put the oil in a frying pan and fry the peel of a lemon in it. When it begins to brown, remove the shell and let the oil cool completely.

In a bowl We add the eggs, the sugar, the orange juice, the oil, the grated peel of the orange. We beat until all the ingredients are incorporated.

Next we add the sachets of raising agent, the salt and the flour little by little. We mix with the rods until the consistency of the dough forces you to work with your hands. We continue to incorporate flour until we obtain a soft, slightly sticky dough.

Let rest for 20 minutes in a bowl covered with plastic wrap.

In a pan we put a good amount of sunflower oil, enough so that the donuts can float.

We anoint our hands with a little oil and drink portions of dough the size of a walnut, about 35 grams. approximately. We roll the portions one by one between our hands until we make a strip of about 12 cm. that we join at the ends to form the donut.

We fry them as we form them, without crowding them, in the pan. When they are golden, we turn them over so that they also brown on the other side.

We take them out and place them on a absorbent paper. Then we batter them in the mixture of sugar and cinnamon and present.
