Romanescu cupcakes

We will make the romanescu cakes in the oven, in this way we do not add any oil so it is, in addition to delicious, a very light way of eating vegetables. Ingredients
- ½ kg of romanescu
- 120 gr soft cheese
- 100 gr breadcrumbs
- 2 large eggs
- coriander leaves
- pinch pepper
- pinch salt
Preparation
- We start by cooking the romanescu, we can do it in a saucepan or in the microwave. I have washed, chopped and cooked it for 8 ′ in the micro. We let it cool down a bit.
- We put the romanescu in a mincer, add all the ingredients and grind.
- We take a baking tray and we put greaseproof paper on it. With the help of a plating ring we are taking tablespoons of dough and making the cakes. We try to make them all the same.
- We go to the oven, we will put it at 250ºC until golden brown, about 20 ′ approximately.
