Sometimes we cook almost without thinking because it is something that we have already repeated many times and we refuse to give it a touch of originality. That is my case with the omelette, I usually do it with many variants, but our favorite is with cheese and flavored with a little thyme. Today I bring you a light and usual dinner at home, but this time with a different presentation.

Ingredients per roll:
- 2 eggs

Preparation:

On the other hand put half a tablespoon of olive oil in a skillet (if your pan is non-stick this will not be necessary) and, when it is hot, add the beaten eggs that you reserved before. Roll it up (carefully, it burns) and don't worry if the same thing happened to you, once the roll You will not see anything, just start rolling from the part that is broken so that it is inside. Cut the ends to make it even more presentable and voila, you have your tortilla roll stuffed with cheese done, when serving, sprinkle with thyme and to enjoy!.
When serving ...
You can leave it as you see it in the photo if you want your presentation to be a little more "glamorous", like nouvelle cuisine. If not you can accompany it with a salad or some olives in case you don't want to eat anything else.
Recipe suggestions:
- Instead of thyme you can use any other aromatic herb that you like or even a mixture of them.
- Don't throw away the ends you cut! You can simply eat them or reserve them to make a later rice Chinese style: Boil some rice, add the bits of tortilla, One green peas boiled, corn and you already have a very simple and rich rice ready.
- If you lose the cheese, try adding it grated cheese on top and gratin it, delicious!
- You can fill it with another type of cheese instead of the classic in portions or add more quantity if you wish.
