Have you done a lot of excesses this Christmas? If so, the recipe we prepare today may interest you. It is a healthy recipe that combines a great variety of vegetables roasted with a cup of rice. A complete plate with which you will have the food solved.
It will be very easy for you to prepare these roasted vegetables with brown rice. Once all the ingredients are prepared, you just have to cook the rice and let the oven do its job. Time and work that you can reduce if you already have the cooked rice. At home we usually prepare two cups on the weekend, refresh it and keep it in an airtight container in the fridge. So we just have to skip it a little when we need it. Isn't that a good habit?
- 1 broccoli
- 1 purple onion
- ½ red pepper (roasted)
- 1 green pepper
- 2 large carrots
- Extra virgin olive oil
- Sal Island
- Pepper
- Paprika
- Hot paprika
- 1 garlic clove
- 1 cup of cooked brown rice
- If we do not have cooked rice we put it to cook in plenty of water salty.
- We cut the broccoli into flowers and blanch 4 minutes in salt water.
- While we prepare the vegetables. Cut the peppers into strips and place them on the oven tray. Peel the onion and carrot and cut the first into pieces and the second into slices to incorporate them into the tray.
- Once the broccoli is blanched, we dry it well and add it to the tray.
- We pour a drizzle of oil on the vegetables and with our hands we make sure that they are soaked. We can also brush them with a silicone brush.
- Afterwards, we season and sprinkle with paprika sweet and chopped paprika before taking the tray to the oven.
- We bake at 180ºC for 30 minutes. The time will depend on both your oven and your tastes.
- Once the rice is done, we cool it, drain it and sauté with a clove of garlic minced and some spice.
- To finish, we place the baked vegetables and rice in a source and take them to the table.
