Chicken Risotto
El Risotto It is a great dish to recharge your batteries in summer, despite being a hot dish. This risotto is very healthy since it is made with low calorie foods like chicken and a light cheese. In this way, we keep the line at this time of year.
Rice is one of the richest and most demanded foods by children, so today we use this Italian cooking technique to vary your intake. Thus, we opted for varied, rich and healthy recipes that are very simple and easy to make for the little ones in the house.
Ingredients
- 1 onion.
- 2 garlic cloves.
- 1 large green bell pepper.
- 2 medium tomatoes.
- 1 chicken breast.
- 1 glass of wine.
- Chicken soup.
- 200 g of rice.
- Salt
- Grated light cheese.
Preparation
First, we will prepare all the vegetables. To do this, we will peel and wash them very well, and then chop them into small cubes. With all these vegetables we will make a kind of whole sauce in a wide frying pan with a good drizzle of olive oil.
When all the above is diminished, we will add the chopped chicken breast in medium dice and let it cook until it changes color, stirring little by little. Then we will add the white wine and let it cook for another 5 minutes.
Later, we will add the rice and stir so that it mixes throughout the stew. Then, we are casting the chicken soup little by little stirring every so often, so the rice will release the starch and the risotto will form.
Finally, when the rice is tender, we will remove from the heat and add the grated cheese. We will stir slowly and let it rest for a few minutes.
