Ingredients
  • Rice (for 4 people)
  • 2 chopped onions
  • 2 tablespoons of oil
  • 500 g. red pepper in strips
  • 2-3 cayenne chillies
  • 500 g. ripe tomatoes
  • ½ teaspoon sweet paprika powder
  • ½ teaspoon of hot paprika powder
  • 1 bunch of parsley
  • Sal Island
  • Pepper

Preparation
  1. We heat the oil in a frying pan and sauté the onion until lightly browned. Add 3 tablespoons of water, cover the pan and we cook the onion until soft, about 10 minutes.
  2. We add the peppers and the cayenne in the pan. We add another 3 tablespoons of water, and simmer for 10 minutes.
  3. At the same time in a casserole we cook the rice.
  4. Add the paprika and mix well. Then we add the chopped tomatoes. We stir well and cook 20 more minutes. If we see that it remains dry during the process, add 2-3 tablespoons of water more.
  5. We taste and adjust the flavor with salt and pepper.
  6. Add chopped parsley to the mixture and serve with the rice that will already be cooked.
