Scrambled eggs
Last day we were visiting the town to enjoy the company of the family and they surprised us with a great traditional lunch typical of the villages. A country scramble made with products from the land and tradition, potatoes, eggs and chorizo.
With just a few ingredients we can be satisfied with all the flavor of our country, although that yes with enough calories, which with a great bike tour cannot be burned. The important thing is to be able to enjoy from time to time these dishes of yesteryear that leave their mark on successive generations.
Ingredients
- 1 Iberian chorizo.
- 3 kilos of potatoes.
- 1 large onion.
- 3-4 eggs.
- Olive and sunflower oil.
- Salt
Preparation
First of all, we will finely chop the onion and chorizo in small dice. We will fry this together in a frying pan with a good base of olive oil. When we see that the onion is depleted we will remove it from the heat and drain on absorbent paper.
On the other hand, we will peel the potatoes and we will cut them in an elongated way like french fries. We will fry these in abundant sunflower oil and then we will put them on absorbent paper to eliminate the excess oil.
Finally, we will put the potatoes, onion and chorizo in a wide and deep frying pan to heat them a little. We will add the eggs and we will stir a little so that these bind with the other ingredients and thus make our scrambled camper.
