Quince mayonnaise

This mayonnaise is ideal for baked, charcoal, wood-fired or grilled pork.

It takes 20 minutes and makes 5 generous servings, you can keep it in the fridge for up to 5 hours.

Ingredients

¼ kilo of quinces
3 cloves of garlic
Salt and pepper
1 small cup of coffee filled with corn oil

Preparation

Put the quinces cut into pieces in a blender, without skin or seed, add the oil, salt, pepper and garlic cloves.

Cover the jar of the blender and blend everything, until there is a white paste whose consistency is very similar to a light puree, if you have more pasty, you can gradually add a thread of oil, until you have this texture.
