The hamburger format is ideal for cooking all kinds of ingredients, since the flavors are very well camouflaged and you can add many ingredients.

For today's hamburgers I have used pumpkin, since it is in season and is the best time to enjoy all the nutritional benefits of this vegetable. As for spinach, they cannot be missing from the table since they are a source of iron and calcium, essential for good health. These hamburgers can be served on the plate, but if you want to give it another touch, you can prepare a traditional hamburger with seed bread, cheese, some tomato slices and tomato sauce. Ingredients
  • 400 gr of fresh pumpkin
  • 250 gr of spinach sprouts
  • 2 eggs
  • chickpea flour or breadcrumbs
  • extra virgin olive oil
  • shawl

Preparation
  1. First we are going to peel and wash the pumpkin very well, cut into not too small portions and reserve.
  2. We wash the spinach shoots very well and reserve.
  3. Now, we are going to put a large saucepan on the fire with water, salt and a drizzle of olive oil.
  4. When the water is hot, add the pumpkin pieces and cook for about 15 minutes or until the vegetables are very tender.
  5. With the help of a slotted spoon, remove the pumpkin from the water and drain.
  6. In the same water where we have cooked the pumpkin, we introduce the spinach and cook for 5 minutes.
  7. We drain and cool the vegetables.
  8. We put the pumpkin in a large container and with a fork we crush it well.
  9. With scissors, we chop the spinach and mix with the pumpkin.
  10. Add two beaten eggs and salt to taste.
  11. Finally, we add chickpea flour or breadcrumbs, until the dough acquires consistency.
  12. We are going to separate the dough in plastic wrap, so that it hardens before going through the pan.
  13. We put in the refrigerator for at least 2 hours before cooking.

Notes
You can freeze the hamburger dough without problems.
